- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 2 large eggs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 ½ cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- ¼ cup pickles, chopped (optional)
- 1 tbsp Worcestershire sauce
- 1 tbsp mustard
- ½ cup ketchup, divided
- ¼ cup BBQ sauce (optional)
- Salt and black pepper, to taste
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and let it drain on a paper towel-lined plate. Once cooled, crumble or chop the bacon into small pieces.
- Mix the Meatloaf Base: In a large mixing bowl, combine ground beef, breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, mustard, ¼ cup ketchup, salt, and pepper. Mix until just combined.
- Add the Cheeseburger Flavor: Gently fold in shredded cheddar cheese, chopped pickles (if using), and crumbled bacon.
- Shape the Meatloaf: Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, ensuring it is compact and even.
- Prepare the Glaze: In a small bowl, mix the remaining ketchup and BBQ sauce (optional). Brush over the top of the meatloaf.
- Bake: Place the meatloaf in the oven and bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and Serve: Remove from the oven and let rest for 5–10 minutes before slicing. Serve warm.
