Ingredients

For the Cake:

1 cup (240ml) Guinness stout

1 cup (230g) unsalted butter

¾ cup (75g) unsweetened cocoa powder

2 cups (400g) granulated sugar

¾ cup (180g) sour cream

2 large eggs

1 tablespoon vanilla extract

2 cups (250g) all-purpose flour

2½ teaspoons baking soda

½ teaspoon salt

For the Frosting:

1½ cups (340g) cream cheese, softened

1½ cups (190g) powdered sugar

½ cup (120ml) heavy cream

1 teaspoon vanilla extract

Optional Garnishes:

Chocolate shavings or curls

Cocoa powder for dusting

Fresh berries or mint leaves


Instructions

Preheat and Prepare:

Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.

 

Combine Guinness and Butter:

In a saucepan, heat Guinness and butter until melted. Remove from heat, whisk in cocoa powder, and set aside to cool.

Mix Wet Ingredients:

In a large bowl, combine sugar, sour cream, eggs, and vanilla. Beat until smooth.

Add Guinness Mixture:

Gradually pour the Guinness mixture into the wet ingredients and mix until combined.

Combine Dry Ingredients:

In a separate bowl, sift flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.

Bake the Cakes:

Divide batter between the pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack.

Prepare the Frosting:

Beat cream cheese until smooth. Add powdered sugar, heavy cream, and vanilla. Beat until light and fluffy.

Assemble the Cake:

Frost the cooled cake layers, stacking them evenly. Garnish with chocolate shavings, cocoa powder, or fresh berries.

Notes

Store the cake in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.

For a gluten-free version, use a gluten-free flour blend and ensure the Guinness is gluten-free.
